摘 要:羊乳作为我国第二大乳源,含有丰富的营养物质并且易于人体吸收。牛乳虽然在市面上广受消费者青睐,但在营养成分和价值方面不及羊乳。近年来出现的在羊乳中掺入牛乳成分的掺假问题已经严重影响了我国羊乳产业的发展,虽然这种掺假方式不会造成严重的食品安全问题,但仍存在过敏反应等潜在的安全隐患,应引起高度关注。从鉴别检测这一角度分析,牛乳和羊乳相似度较高,常规的检测方法难以实现羊乳中牛乳成分的检测,探寻新的检测方法成为解决这一问题的关键。目前常用的检测技术有电子鼻法、电泳法、环介导等温扩增法、近红外光谱法等。虽然各检测技术都能检出羊乳中的牛乳成分,但大多检测技术仍有一定的局限性,所以总结各检测技术的优势和缺陷就显得尤为重要。As the second largest milk source in China,goat milk is rich in nutrients and easy to be absorbed by human body.Although cow milk is widely favored by consumers in the market,it is far inferior to goat milk in terms of nutrition and value.In recent years,the adulteration of cow milk in goat milk has seriously affected the development of goat milk industry in China.Although this kind of adulteration will not cause serious food safety problems,there are still potential safety risks such as allergic reaction,which should be highly concerned.From the perspective of identification and detection,cow milk and goat milk have a high similarity,and it is difficult for conventional detection methods to detect cow’s milk components in goat milk,so exploring new detection methods becomes the key to solve this problem.At present,the commonly used detection techniques include electronic nose,electrophoresis,loop-mediated isothermal amplification,near infrared spectroscopy and so on.Although each detection technology can detect milk components in goat milk,most detection technologies still have certain limitations,so it is particularly important to summarize the advantages and disadvantages of each detection technology.
