摘  要:麻仁中含有20%~25%的蛋白,营养丰富,富含人体所需的各种必需氨基酸,相比于大豆蛋白,麻仁蛋白不含有过敏源、更易消化且具有更好的营养结构,是一种优质的植物蛋白资源。麻仁蛋白及其水解产物具有抗氧化、降血压、降胆固醇等生物活性,可以作为生物功能蛋白和活性肽等生物活性物质的重要来源。对麻仁蛋白的提取、理化性质以及活性肽的功能研究进行综述,为麻仁蛋白及其水解产物活性肽相关的功能性食品和医药相关生物制品的研发提供参考。Hemp seed is rich in nutrition,it contains 20%-25%protein and all the essential amino acids needed by human body.Compared with soybean protein,hemp seed protein has a better nutritional structure and does not contain allergens,which can be seen as a kind of high-quality plant protein.Hemp seed protein and its hydrolyzed products have many different biological activities,including antioxidant,antihypertensive,antiproliferative,hypocholesterolemic.Hemp protein can be used as an important source of bioactive substances such as biofunctional proteins and active peptides.In this paper,relevant research reports about hemp seed protein and its hydrolyzed were collected to review the research of hemp seed protein and its hydrolysate active peptide.We aim to provide reference for the research and development of functional food and medicine-related biological products.
