摘 要:[目的]了解土坛树果实中的部分元素分布、氨基酸含量与果实基本品质,为土坛树的综合开发利用提供基础数据。[方法]对不同成熟度土坛树果实利用原子吸收分光光度计法测定铁(Fe)、锰(Mn)、锌(Zn)、铜(Cu)、硒(Se)共5种微量元素与钙(Ca)、钾(K)2种常量元素含量;利用色谱法测定天冬氨酸、苏氨酸、丝氨酸、谷氨酸、脯氨酸等共16种氨基酸含量;对土坛树的一些果实基本品质指标包括果形指数、果实含水率及可溶性糖进行测定。[结果]土坛树不同成熟度果实中元素含量与氨基酸含量水平间存在一定的差异性:S_(1)(开始成熟期果实)与S_(2)(完全成熟期果实)在Fe、Mn、Cu、Se这4种微量元素含量上差异极小,但S_(2)中的Zn、K、Ca则显著高于S_(1);S_(1)和S_(2)的氨基酸总和分别为10.06和11.27 g/kg,而人体必需氨基酸含量占所测定氨基酸总量分别为30.12%和29.81%;S_(1)与S_(2)的果形指数、果实含水率与可溶性糖含量分别为0.99和1.10、79.77%和78.20%、81.81和96.85 mg/g。[结论]土坛树2个不同成熟阶段果实综合指标S_(2)大于S_(1),果实均含有丰富的氨基酸与微量元素,颜色鲜艳、外形美观,果味香甜、汁液丰富,具有较高的营养价值与开发潜力。[Objective]To explore the distribution of some elements,the content of amino acids and the basic quality of the fruit of Alangium salviifolium,and provide basic data for the comprehensive development and utilization of Alangium salviifolium.[Method]The contents of 5 kinds of microelements(Fe,Mn,Zn,Cu,Se)and 2 kinds of major elements(Ca,K)were determined by atomic absorption spectrophotometer in the fruits of different maturity soil altar trees;the contents of 16 kinds of amino acids,such as aspartic acid,threonine,serine,glutamic acid and proline,were determined by chromatography;some basic fruit quality indexes including fruit shape index,fruit water content and soluble sugar were determined.[Result]There were some differences in the contents of elements and amino acids in the fruits of different maturity:there was little difference in the contents of Fe,Mn,Cu and Se between S_(1)(fruit at the beginning of maturity)and S_(2)(fruit at the full maturity),but the contents of Zn,K and Ca in S_(2) were significantly higher than S_(1);the total amino acids of E1 and S_(2) were 10.06 and 11.27 g/kg respectively,while the contents of essential amino acids in human body accounted for 30.12%and 29.81%of the total amino acids measured respectively;the fruit shape index,fruit moisture content and soluble sugar content of S_(1) and S_(2) were 0.99 and 1.10,79.77%and 78.20%,81.81 and 96.85 mg/g,respectively.[Conclusion]The comprehensive index S_(2)>S_(1) of the fruits at two different maturity stages of Alangium salviifolium.The fruits are rich in amino acids and trace elements,bright in color,beautiful in appearance,sweet in taste and rich in juice.They have high nutritional value and development potential.
