摘 要:随着人们物质生活水平的不断提升,对于食品消费也有了更高的要求,乳制品不仅可为人们提供丰富的蛋白质、维生素以及钙元素,同时对于我国农业附加产值的提升也具有积极意义,但乳制品保存期较短且会受到多种外界因素影响,需考虑整个供应应链中的环节管控,其中包括乳制品的生产、加工、销售和储存等多个环节。本文从乳制品质量安全以及乳制品供应链两个角度分析了影响其自身质量安全的因素,结合工作实践提出提升乳制品安全质量的应对策略。With the improving of the people’s material life level, the food consumption also have higher requirements for food consumption. Dairy products can not only provide people with rich protein, vitamins and calcium, at the same time for the ascension of additional output value of agriculture in our country also has positive significance. However, dairy products have a short shelf life and will be affected by a variety of external factors. It is necessary to consider the control of the whole supply chain, including the production, processing sales and storage.This paper analyzes the factors that affect the quality and safety of dairy products from the perspectives of dairy product quality and safety and dairy product supply chain, and puts forward countermeasures to improve the safety and quality of dairy products based on work practices.
