摘 要:为揭示多酚类化合物在上部烟叶质量评价中的作用,收集13个省(直辖市)28个产烟市B2F代表样品111份,研究了主要多酚类化合物在不同种植区域、不同外观质量烟叶间含量的差异及其与感官质量的相关性。结果表明:(1)不同种植区域上部烟叶主要多酚类物质含量差异显著,且不同多酚类化合物在不同种植区域含量分布规律也不一致;(2)莨菪亭、绿原酸含量与主要外观质量指标关系密切。随叶片颜色加深,其绿原酸含量呈显著降低趋势,莨菪亭则相反,油分相对较好、结构相对疏松、色度相对较强的烟叶其莨菪亭含量显著较低;(3)莨菪亭对7项烟叶感官质量指标均有显著影响,绿原酸主要影响细腻感、刺激性和余味。莨菪亭含量小于0.2 mg/g,绿原酸含量大于15 mg/g,烟叶感官质量得分显著较高。莨菪亭、绿原酸含量可作为上部烟叶品质评价的重要指标。In order to reveal the effect of polyphenols on quality evaluation of upper tobacco leaves, 111 representative samples of B2F from 28 tobacco-producing cities in 13 provinces(municipalities directly under the central government) were collected, and the differences of major polyphenol contents in different planting areas and their correlation with the appearance and sensory quality of tobacco leaves were investigated using ANOVA and correlation analysis. The results showed that:(1) There were significant differences in the contents of major polyphenols in upper tobacco leaves from different planting areas, and the content distribution of different polyphenols in different planting areas was also different;(2) The contents of scopoletin and chlorogenic acid were closely related to the main appearance quality indexes: with the deepening of leaf color, the content of chlorogenic acid decreased significantly, while the content of scopoletin increased significantly. The content of scopoletin was significantly lower in tobacco leaves with relatively good oil, loose structure and strong color;(3) Scopoletin had significant effects on 7 sensory quality indexes of tobacco leaves, and chlorogenic acid mainly affected sensory delicacy, irritability and aftertaste. When the content of scopoletin was less than 0.2 mg/g, the content of chlorogenic acid was more than 15 mg/g, the score of sensory quality was significantly higher. The contents of scopoletin and chlorogenic acid can be used as important indexes for quality evaluation of upper tobacco leaves.
