摘  要:以辣木叶粉为原料,采用微生物发酵法提取辣木有机钙。以天然橙粉、蔗糖、酸味剂(柠檬酸、苹果酸)、麦芽糊精等为辅料,研制一款辣木高钙固体饮料。以感官评分为主要评价指标,单因素试验结合响应面优化,确定辣木高钙固体饮料的最优配方参数,并测定辣木叶提取物中有机钙的鳌合率及固体饮料的理化指标。结果表明,辣木高钙固体饮料的最佳配方为天然橙粉添加量29.4%,麦芽糊精添加量15.07%,酸味剂添加量2.34%,蔗糖添加量18.85%;研制的辣木高钙固体饮料的钙含量为0.41%,水分含量为4.72%,溶解度为90.24%,吸湿性为85.27%,辣木叶提取物中有机钙鳌和率为47.69%。制备的辣木高钙固体饮料色泽均匀、口感较好、有辣木及鲜橙香味,冲泡速溶性好,是一种较佳的天然补钙产品。In this paper,Moringa oleifera leaf powder was used as raw material to extract organic calcium from Moringa oleifera by microbial fermentation.The high calcium solid beverage of Moringa oleifera will be developed with natural orange powder,sucrose,sour agent(citric acid,malic acid)and maltodextrin as excipients.Taking sensory score as the main reference index,single factor experiment combined with response surface optimization to determine the optimal formula parameters of Moringa oleifera high calcium solid beverage,and determine the chelation rate of organic calcium in Moringa oleifera leaf extract and the physical and chemical indexes of solid beverage.The results showed that the best formula of Moringa oleifera high calcium solid beverage was 29.4%natural orange powder,15.07%maltodextrin,2.34%sour agent and 18.85%sucrose;The calcium content of Moringa oleifera high calcium solid beverage was 0.41%,the moisture content was 4.72%,the solubility was 90.24%,and the hygroscopicity was 85.27%.The sum rate of organic calcium in the extract of Moringa oleifera leaves was 47.69%.The prepared horseradish high calcium solid beverage had uniform color,good taste,spicy and fresh orange flavor,and good instant solubility.It was a better natural calcium supplement product.
