摘 要:研究旨在探究饲料脂肪水平对卵形鲳鲹(Trachinotus ovatus)肌肉品质、抗氧化能力及相关基因表达的影响。选取初始体质量为(28.42±0.02)g的健康卵形鲳鲹分为6组,配制脂肪水平分别为9.13%、10.59%、12.12%、14.98%、16.25%、19.26%的6种等氮(粗蛋白含量为45.63%)不等脂的饲料(分别记为G1、G2、G3、G4、G5组和G6组)投喂卵形鲳鲹8周。结果发现,G3和G4组:(1)肌纤维面积和半径较G1和G6组显著增大(P<0.05),肌肉硬度、弹性和胶原蛋白含量高于其他试验组;(2)肌肉丙二醛(Malondialdehyde,MDA)含量较G1、G2组和G6组显著降低(P<0.05),超氧化物歧化酶(Superoxide Dismutase, SOD)和谷胱甘肽过氧化酶(Glutathione peroxidase, GSH-Px)活性高于其他试验组;(3)肌肉生长抑制素(Myostatin,MSTN)表达较G5和G6组显著降低(P<0.05),肌细胞生成素(Myogenin,MyoG)表达量高于其他试验组。综上所述,以对肌肉品质、抗氧化能力及相关基因表达的影响为评价指标,卵形鲳鲹饲料中最适脂肪水平为12.12%~14.98%。The purpose of this study was to investigate the effect of dietary fat levels on the muscle quality, antioxidant capacity and expression of related genes of golden pompano(Trachinotus ovatus). Healthy golden pompano with an initial body weight of(28.42±0.02) g were selected and divided into 6 groups. 6 kinds of isonitrogenous(45.63% crude protein) unequal lipids were prepared with fat levels of 9.13%,10.59%, 12.12%, 14.98%, 16.25% and 19.26%, respectively(referred to G1, G2, G3, G4, G5 and G6)and the fish were fed for 8 weeks. The results showed that in the G3 and G4:(1) the myofiber area and radius of the golden pompano were significantly increased compared with that of G1 and G6(P<0.05),and the muscle hardness, elasticity and collagen content were higher than other groups;(2) the MDA content in muscle was significantly decreased compared with that of G1, G2 and G6(P<0.05), and the activities of antioxidant enzymes SOD and GSH-Px were higher than other groups;(3) The expression of MSTN was significantly decreased compared with that of G5 and G6(P<0.05), and the expression of Myo G was higher than other groups. To sum up, taking the effects on muscle quality, antioxidant capacity and expression of related genes as evaluation indexes, the optimal fat level in the diet of golden pompano is 12.12%~14.98%.
