摘  要:主要对食品添加剂中2种重金属元素展开研究,通过比较检测重金属含量的2种光谱法(GF-AAS和ICP-OES),分析每种方法在食品检测过程中的优势。选取卡拉胶作为研究对象,通过检测其中的镉、铅2种重金属元素含量,对检出限、加标回收率以及重复性进行数据分析,为食品添加剂中重金属的检测提供有效的分析方法。结果表明,GF-AAS测定2种重金属元素的检出限较ICP-OES低;但是对于重复性检测、加标回收率计算,ICP-OES的效果优于GF-AAS。Two kinds of heavy metal elements in food additives were studied, and the advantages of each method in the food detection process by comparing the two spectral methods(GF-AAS and ICP-OES)for detecting the content of heavy metal were analyzed. Carrageenan was selected as the research object,and data analysis was carried out by detecting the detection limit, recovery rate and repeatability of cadmium and lead in carrageenan, providing an effective analytical method for the detection of heavy metals in food additives. The results showed that the detection limit of GF-AAS was lower than that of ICP-OES;however,the effect of ICP-OES was better than that of GF-AAS for repeatability detection and calculation of spiked recovery.
