摘 要:近年来,食品中的砷污染越来越引起人们的重视,其高毒性和致癌性对人体健康造成重大威胁。通常食品中的砷包含有机砷和无机砷,因其存在的化学形态不同,毒性也有差异。总砷的含量并不能直接反映砷对人体健康的影响,砷的形态分析更能够直接提供砷的毒性信息。因此,对食品中的砷进行形态分析十分必要。文章对食品中砷形态分析的研究进展进行了概述,对其提取方法及测定方法进行了分析阐述,旨在为进一步评估和防控重金属污染提供参考。In recent years,arsenic pollution in food has attracted more and more attention,which high toxicity and carcinogenicity posed a significant threat to human health.Arsenic in food includes organic arsenic and inorganic arsenic,showing variable toxicity on account of a variety of chemical forms it presents.The content of total arsenic does not directly reflect the impact of arsenic on human health.However,the morphological analysis of arsenic can more directly provide information on arsenic toxicity.Therefore,the morphological analysis of arsenic in food is extremely necessary.This paper analyzed the research progress of arsenic morphology analysis in food,and analyzed its extraction method and determination method,aiming to provide reference for further evaluation,prevention and control of heavy metal pollution.
