摘　　要：目的了解云南省餐饮服务单位加碘食盐的覆盖及合格情况。方法在全省10个县(市、区),每个县(市、区)分别抽取5个乡(镇),每个乡(镇)随机抽取2个企事业单位食堂、5家中型餐馆和5家小型餐馆进行调查,共采集了606份盐样,并检测食盐中的碘含量。结果食用盐碘含量均值为25.86 mg/kg,碘盐覆盖率、合格碘盐食用率、碘盐合格率和无碘盐率分别为99.67%、97.52%、97.85%和0.33%。经统计学分析,不同渠道来源、不同产地食盐碘含量间的差异均有统计学意义(P<0.05),即从“批发商”渠道购买的食用盐碘含量高于“超市”渠道购买的食用盐碘含量、云南省本土生产的食用盐碘含量低于非本土生产的食用盐碘含量。结论云南省餐饮服务单位碘盐覆盖率和合格碘盐食用率总体情况较好,但市场上仍存在不合格碘盐和无碘盐,应该引起重视和持续关注。Objective To survey the coverage rate of iodized salt and the qualified rate of iodized salt in Yunnan Province.Methods We’ve randomly choosed ten counties(cities,districts)in Yunnan Province,and five villages or towns were selected in each county,then selected two canteens of enterprises and institutions and five medium-sized restaurants and five small-sized restaurants in each township to carry out the survey.A total of 606 salt samples were collected and tested the iodine content.Results The average iodine content of salt was 25.86 mg/kg.The coverage rate of iodized salt,the consumption rate of qualified iodized salt,the qualified rate of iodized salt and the non-iodized salt rate were 99.67%,97.52%,97.85%and 0.33%,respectively.After statistical analysis,there were significant differences among different sources and different production area(P<0.05).The iodine content of salt from the wholesalers was higher,relative to that from the supermarket’s.The iodine content of salt manufactured by the Yunnan indigenous industry was lower,relative to that from the non-local production’s.Conclusion The coverage rate of iodized salt and the consumption rate of qualified iodized salt are generally good in Yunnan Province,but there are still unqualified iodized salt and non-iodized salt in the market,which should be paid attention to continually.
