摘 要:以江苏沿海地区农业科学研究所从野生盐地碱蓬中选育出的沿海碱蓬1号为试验材料,系统测定其在不同生育期的主要营养成分、生物活性物质、矿质元素及有害金属等含量,并对其营养价值进行评价与分析。结果表明:盐地碱蓬是一种高蛋白、低脂肪、矿物质丰富,且富含黄酮、多糖和总酚等功能性成分的耐盐蔬菜,无论是将其鲜嫩茎叶用作食用,还是生长后期用作饲料成分,盐地碱蓬有害金属元素含量均符合相应的国家标准,是开发保健食品的优质原料,具有较大开发利用潜力。In this study,a Suaeda salsa variety Yanhaijianpeng No.1,bred from wild Suaeda salsa by Institute of Agricultural Sciences in Costal Area of Jiangsu Province,was selected as the test material to systematically measure its main nutrients,bioactive substances,mineral elements and harmful metals in different growth and developmental stages,and its nutritional value was also analyzed and evaluated.The results have shown that Suaeda salsa is a salt-tolerant vegetable with high proteins,low fat,and rich minerals and functional components such as flavonoids,polysaccharides and total phenols.No matter its fresh stems and leaves are used as food or as fodder in the later growth stage,the content of harmful metal elements in Suaeda salsa complies with the corresponding national standards.It is an excellent raw material for the development of health food and has great potential for development and utilization.
