摘  要:基于抗体法,采用自主研发的右旋糖酐单抗试剂盒对制(炼)糖生产过程原料、在制品及产品右旋糖酐含量进行研究,探究右旋糖酐形成、清除及转移规律,为糖厂高效、精准降低右旋糖酐负面影响提供了依据。研究结果表明,目前国内糖料甘蔗中右旋糖酐含量普遍低于100 mg/kg,进口原糖中右旋糖酐含量则偏高,特别是部分国储原糖中右旋糖酐含量远远超过原糖国家标准(400 mg/kg)。制(炼)糖生产过程中,右旋糖酐新增主要发生在蒸发前,传统的亚硫酸法、石灰法等澄清工艺对右旋糖酐的清除效果有限,而无蜜洗的炼糖工艺几乎无法有效清除原料带来的右旋糖酐,其从原糖到产品的转移率可高达50%。相比于白砂糖,尽管精制糖经过“二步法”,纯度更高,但其右旋糖酐问题可能更为突出。Based on the antibody method,self-developed dextran monoantibody kit is used to study the dextran content of raw materials,in-process products and products in the sugar manufacturing(refining)process and explore the formation,elimination and transfer rules of dextran,so as to provide a basis for sugar factories to effectively and accurately reduce the negative impact of dextran.The results show that the content of dextran in domestic sugarcane is generally lower than 100 mg/kg,while the content of dextran in imported raw sugar is higher.In particular,the dextran content in some domestic stored raw sugar far exceeds the national standard of raw sugar(400 mg/kg).In the process of sugar manufacturing(refining),the increase of dextran mainly occurs before evaporation.The traditional sulfite method,lime method and other clarification processes have limited effect on the removal of dextran,while the sugar refining process without honey washing can hardly remove the dextran brought by raw materials effectively.Its transfer rate from raw sugar to products can be as high as 50%.Compared with white granulated sugar,although refined sugar has higher purity through two-step process,its dextran problem may be more prominent.
