摘  要:【目的】葡萄种子中酚类物质含量丰富,极具开发利用价值。以不同用途葡萄品种为试验材料,测定比较不同品种葡萄种子中不同酚类物质含量,为科学利用葡萄种子中营养物质提供理论依据。【方法】以葡萄品种赤霞珠、品丽珠、长相思、霞多丽、早黑宝、玫瑰香为试材,测定各品种果实中的总酚、单宁、类黄酮、原花色素的含量,结果进行比较分析。【结果】不同品种葡萄种子中酚类物质含量差异显著,酿酒红葡萄种子中酚类物质含量丰富,酿酒葡萄赤霞珠种子中总酚和单宁物质显著最高,其中总酚物质含量是鲜食葡萄玫瑰香的3.49倍;酿酒红葡萄种子类黄酮含量显著高于酿酒白葡萄,其中赤霞珠葡萄种子中类黄酮含量比霞多丽高123.90%;酿酒红葡萄种子原花色素含量较高,其中赤霞珠葡萄种子中原花色素含量最高,为5.24 mg/g。【结论】葡萄种子中酚类物质种类多且含量高,具有较高的药用保健价值,可通过对不同葡萄品种在不同行业的应用,加强葡萄种子营养物质的开发利用。【Objiective】The content of phenols in grape seeds is rich,which is of great value for development and utilization.Taking grape varieties with different uses as experimental materials,the contents of different phenols in grape seeds of different varieties were determined and compared,which provided theoretical basis for scientific utilization of nutrients in grape seeds.【Methods】The contents of total phenols,tannins,flavonoids and proanthocyanidins in the fruits of grape varieties Cabernet Sauvignon,Cabernet Franc,Sauvignon Blanc,Chardonnay,Zaoheibao and Rose Fragrance were determined and the results were compared and analyzed.【Results】Tthe content of phenols in grape seeds of different varieties were significantly different.The content of phenols in wine red grape seeds were rich,and the content of total phenols and tannins in wine grape Cabernet Sauvignon seeds were significantly highest,of which the content of total phenols was 3.49 times that of fresh grape rose fragrance;The flavonoid content of wine red grape seeds were significantly higher than that of wine white grape,and the flavonoid content of Cabernet Sauvignon grape seed was 123.90%higher than that of Chardonnay grape seed;The content of proanthocyanidins in wine red grape seeds were high,among which the content of proanthocyanidins in Cabernet Sauvignon grape seed was the highest,5.24 mg/g.【Conclusion】There were many kinds and high content of phenolic substances in grape seeds,which had high medical and health value.The development and utilization of grape seeds nutrients can be strengthened through the application of different grape varieties in different industries.
