江苏地区高水分含量小麦安全储存探讨

摘　　要：比较江苏地区水分含量为13.2%高水分小麦和水分含量为12.3%常规小麦储存期间粮温、主要质量和储存指标及管理成本投入情况,结果显示:高水分含量的小麦平均粮温和最高粮温相比略高0.2℃~0.3℃,水分下降程度略大0.1%,对质量指标容重、不完善粒的影响甚微,对品质指标面筋吸水量下降快略3%左右,品尝评分影响较小,管理成本多增加约0.3元/吨·年。进一步验证试验表明水分13.5%左右的小麦,在现有科技储粮条件下能做到储存安全。能实现(准)低温储藏,水分损耗率0.2%~0.5%,小麦气味、色泽均、品质并不会发生大的变化,直接管理成本较普通水分的仓房储粮周期约增加0.6元/吨,折算水分损耗约节约6.4元/吨。Comparing the grain temperature, main quality and storage indexes and management cost input of 13.2% high moisture wheat and 12.3% conventional wheat in Jiangsu Province during storage, the results showed that the average grain temperature and maximum grain temperature of high moisture wheat were slightly higher than those of conventional wheat by 0.2℃~0.3℃, and the water content decreased by 0.1%, which had little impact on the unit weight of quality indexes and imperfect grains, The water absorption of gluten, the quality index, decreased slightly by 3%, the tasting score had little impact, and the management cost increased by about 0.3 yuan/ton/year. Further validation tests showed that wheat and rice with water content of about 13.5% could also be stored safely under the existing scientific and technological grain storage conditions. It can realize (quasi) low temperature storage, and the water loss rate is 0.2%~0.5%. The smell, color, and quality of wheat will not change significantly. The direct management cost is about 0.6 yuan/ton more than the storage period in the warehouse with ordinary water, and the converted water loss is about 6.4 yuan/ton.
