摘  要:目的查找驻京部队单位食堂存在的食品安全风险,评价餐饮具及环境卫生消毒效果。方法选取60家驻京单位集体食堂,对其卫生管理、建筑与布局、原料采购与贮存卫生、环境卫生与设施等项目进行现场勘验和制度检查;采用大肠菌群食(饮)具快速检测纸片对餐饮具消毒质量进行抽检;采用紫外线强度指示卡检测紫外线消毒灯消毒效果。结果60家食堂中食堂卫生风险发生比例排名前5位的为无水质检测报告(63.33%),无集中空调检测报告(40%),食材贮存不合规(36.67%),食品留样种类不全和(或)分量不足(36.67%),以及冷荤间紫外线灯悬挂位置不合理(36.67%)。紫外线灯辐照强度不足的单位占比为8.33%。共抽检300件餐饮具,总合格率为97%;其中,餐盘消毒合格率为98.33%,筷子合格率为95%。结论驻京部队单位食堂管理有待加强,筷子等餐具消毒和紫外线灯辐照消毒需规范。Objective To find out the food safety risks in the canteens military units in Beijing,so as to evaluate disinfection effect of tableware and environment.Methods Field inspection and system inspection were carried out on the hygiene management,building and layout,raw material procurement and storage hygiene,environmental sanitation and facilities of canteens of 60 military units in Beijing.The rapid detection paper of coliform food(drink)utensils was used to spot check the disinfection quality of tableware.The UV intensity indicator card was used to detect the disinfection effect of UV disinfection lamps.Results The top 5 risk points of the 60 canteens were as follows:no water quality test report 63.33%,no centralized air conditioning test report 40%,food materials storage non-compliance 36.67%,food sample types incomplete and the quantity insufficient 36.67%,unreasonable hanging position of ultraviolet lamp in cold meet rooms.The irradiance deficiency rate of ultraviolet lamp was 8.33%.A total of 300 tableware were sampled and the total pass rate was 97%,among which the pass rate of dinner plate was 98.33%,and that of bowl was 95%.Conclusion The management of canteens of PLA garrisons needs to be strengthened,and the disinfection of tableware such as chopsticks and the irradiation disinfection of ultraviolet lamps need to be standardized.
