摘 要:为进一步提升果糖的品质、降低生产成本,文章进行了高品质果糖提质增效生产关键技术的优化,通过小试、中试及产业化试验,确定了最佳的最佳工艺条件。离子交换工序净化处理的最佳进料温度50℃、操作压力120 kPa、上样量7 BV,产品色度低于5.0,ZGA355FD阴树脂代替D354FD阴树脂,树脂寿命提升20%以上;采用4.0%的盐酸代替浓硫酸进行pH值的调控,显著降低色度;PES过滤的最佳进料温度40℃、操作压力60 kPa,颗粒截留率>99%,并显著降低菌落总数和乙醛的含量;延缓结晶的最佳工艺为晶罐温度80℃,转晶20 min,延缓结晶达40 d以上,解决了高纯度果糖的季节性结晶问题。研究结果对促进淀粉糖行业发展具有重要的意义。In this paper,in order to improve the quality of fructose and reduce the production cost,the key technology of high-quality fructose production was optimized.The best process conditions were determined through laboratory experiments,pilot and industrial experiments.The optimal ion exchange feed temperature 50℃,the operating pressure 120 kPa,the sample loading 7 BV,the product color was lower than 5.0,ZGA355FD anion resin replaced D354FD anion resin,and the resin life was increased more than 20%;The pH was regulatrd by 4.0%hydrochloric acid instead of concentrated sulfuric acid,the chromaticity was reduced significantly;The PES filtration optimum feed temperature 40℃,the operating pressure 60 kPa,the particle interception rate>99%,and the total number of colonies and the content of acetaldehyde was reduced significantly;The best delaying crystallization conditions were:the temperature 80℃,the crystallization time 20 minutes,and the crystallization time was delayed to more than 40 days,which solved the problem of seasonal crystallization of high purity fructose.The research is of great significance to promote the development of starch sugar industry.
