摘 要:低度白酒中形成的白色絮状物主要成分为白酒中高级不饱和脂肪酸和相关酯类物质、油酸酰胺,排除了Ca^(2+)、Mg^(2+)、Ba^(2+)、Pb^(2+)产生白色絮状物的可能。作者建立了低度白酒中白色絮状物快速筛查分析的气相色谱-质谱联用法。通过谱库检索的定性结果可知:低度白酒中检测出油酸酰胺、棕榈酸、棕榈酸乙酯、亚油酸乙酯、油酸乙酯,建立的油酸酰胺和芥酸酰胺定量方法在0.5~50 mg/L的线性关系良好(R^(2)>0.999),在3种浓度的加标水平下,回收率为92%~98%,相对标准偏差为0.8%~2.3%,相关系数在0.995以上,外标法定量,方法的定量限(S/N≥3)为0.5mg/kg。该方法前处理简便、灵敏度高、准确性高,可以实现低度白酒中油酸酰胺和芥酸酰胺快速筛查测定。The main components of white floc formed in low-degree liquor were high unsaturated fatty acids, related esters and oleate amide. The possibility of Ca^(2+), Mg^(2+), Ba^(2+)and Pb^(2+)producing white flocs was excluded. A rapid screening and analysis method of white flocculent in low-alcohol liquor by gas chromatography-mass spectrometry was established. The qualitative results of spectral library search showed that oleic acid amide, palmitic acid, ethyl palmitic acid, ethyl linoleate and ethyl oleate were detected in low-alcohol liquor, and the linear relationship between oleic acid amide and erucic acid amide was good in the range of 0.5~50 mg/L(R^(2)>0.999). At the spiked levels of the three concentrations,the recoveries were 92%~98%, the relative standard deviation was 0.8%~2.3%, and the correlation coefficient was above 0.995. The limit of quantification(S/N≥3) was 0.5 mg/kg. The method is simple,sensitive and accurate, and can be used for rapid screening and determination of oleic acid amide and erucic acid amide in low-alcohol liquor.
