摘 要:采用聚能量膜对不同风味特香型白酒进行过滤,通过理化指标、色泽、冷冻实验、感官质量、对比试验等方面探究,检验其过滤效果。研究发现,聚能量膜滤片过滤机能有效除浊,过滤酒样中的高级脂肪酸乙酯,对色泽、感官质量等数据无明显影响;与活性炭过滤酒样对比,理化指标、色泽及感官质量差异较明显,各有优缺点。Poly-energy membrane was used to filter Texiang Baijiu,and its filtration effect was studied through physicochemical in-dexes,color,freezing experiment,sensory quality,and contrast test.The results showed that the poly-energy membrane could effec-tively remove the turbidity and the higher fatty acid ethyl esters in the liquor samples,and had no obvious influence on the color and sensory quality.Compared with the liquor samples filtered by activated carbon,there were obvious differences in physicochemical in-dexes,color and sensory quality.The two filtration methods have their respective advantages and disadvantages.
