摘　　要：啤酒是具有悠久历史的酒精饮料,继水和茶之后的第三大饮品,深受消费者的青睐。我国啤酒工业历经百年发展,已经成为啤酒生产和消费第一大国。近几年受多方面因素影响,啤酒产量开始下滑,销售额却连年增长,啤酒行业进入“量跌价升”时代,高端新型保健啤酒成为重要的发展方向。本文通过分析啤酒的发展历程,对保健啤酒的种类、工艺特点等发展现状进行分析,从制定质量标准、优化酿造工艺、加强技术研发、加快工业化进程等方面提出保健啤酒的未来发展方向,为进一步提高保健啤酒的技术创新和产品优势提供依据。Beer is an alcoholic beverage with a long history.It is the third-largest beverage after water and tea,and is favored by con-sumers.After a century of development,China has become the largest country in beer production and consumption.In recent years,af-fected by many factors,beer production is beginning to decline,but the sales are increasing year by year.The beer industry has en-tered an era of“falling volume and rising price”,and high-end healthcare beer has become an important development direction.This paper introduces the development process of beer production,analyzes the types,characteristics and present development situation of healthcare beer,and proposes the development direction of healthcare beer from the aspects of formulating quality standards,optimiz-ing brewing technology,strengthening research and development,and accelerating the industrialization process.This paper provides some basis for future technological innovation and improvement of product advantages of healthcare beer.
