摘 要:目的基于信息熵理论和反向传播人工神经网络(BP-ANN)结合正交试验优选人参片的真空冷冻干燥工艺。方法采用单因素及正交试验法考察预冻温度、时间、切片厚度、主干燥温度、时间、压力等因素;外观性状通过对人参粉末色度值(L、a、b)进行测定,将冻干人参片的外观性状、失水率、人参皂苷Rg1、Re、Rb1含量、浸出物含量以信息熵计算权重系数并加权作为综合评分(M);再采用BP-ANN技术优化冻干工艺。结果人参片的最佳冻干工艺为切片厚度2~4mm;主干燥温度-10℃、压力0.70mbar、时间≥8h。结论该工艺稳定可行,得到的人参片外观优美,有效成分高,可为工业化生产提供理论依据。Objective To optimize the best Vacuum freeze-drying process of ginseng slices by orthogonal experiment based on information entropy theory and artificial neural network(BP-ANN).Methods Factors such as pre-freezing temperature,time,slice thickness,main drying temperature,time and pressure were investigated by single factor and orthogonal test.Appearance traits Were measured by the chromaticity values of ginseng powder(L,A,B);The appearance,water loss rate,ginsenoside Rg1,Re,Rb1 contents and extract contents of freeze-dried ginseng slices were calculated by information entropy and weighted as a comprehensive score(M).BP-ANN technology was used to optimize the lyophilization process.Results The best freeze-drying technology of ginseng slices was section thickness of 2~4mm、Main drying temperature-10℃、pressure 0.70mbar、time≥8h.Conclusion The process is stable and feasible,the ginseng slices have beautiful appearance and high effective components and this research can provide the basis for industrial production.
