摘  要:采用MRS培养基纯培养方法从南阳酵子中分离出6株乳酸菌,通过生理生化反应、形态学观察和16S rDNA测序进行鉴定,对分离菌株的生长性能、产酸性能、人工胃液耐受性和耐胆盐性能进行研究。结果表明,从5个样品中分离到的6株乳酸菌分别为发酵乳酸杆菌(Limosilactobacillus fermentum)、植物乳杆菌(Lacto-bacillus plantarum)、干酪乳杆菌(Lactobacillus casei)、瑞士乳杆菌(Lactobacillus helveticus)、戊糖片球菌(Pediococcus pentosaceus)和食窦魏斯氏菌(Weissella cibaria)。其中,Ⅰ-8发酵乳酸杆菌(Limosilactobacillus fermentum)的产酸性能、人工胃液耐受性和耐胆盐性能最高,具有一定的应用开发潜力。Six strains of lactic acid bacteria were isolated from Nanyang Jiaozi by the method of pure culture with MRS medium,and identified by physiological and biochemical reaction,morphological observation and 16S rDNA sequencing.The growth performance,acid-producing performance,tolerance to artificial gastric fluid and bile salt tolerance of the isolated strains were studied.The results showed that six strains of lactic acid bacteria were isolated from five samples,including Limosilactobacillus fermentum、Lactobacillus plantarum、Lactobacillus casei、Lactobacillus helveticus、Pediococcus pentosaceus and Weissella cibaria.Among them,the acid-producing capacity,artificial gastric fluid tolerance and bile salt tolerance ofⅠ-8 Lactobacillus fermentum were the highest,which had certain application and development potential.
