摘　　要：中国白酒传统蒸馏工艺与自动化、信息化技术正在加速融合,酒企逐步由传统酿造向智能酿造转型升级。本文聚焦白酒蒸馏环节,总结白酒蒸馏的机理和传统蒸馏工艺经验,在秉承传统工艺基础上,分析智能装备、自动化控制技术和新一代信息技术在白酒蒸馏环节应用现状,为后续酒厂在蒸馏环节上的智能化规划和改造提供借鉴。The traditional distillation process of Chinese Baijiu is increasingly merging with automation and information technology,and distilleries are gradually transforming and upgrading from traditional brewing to intelligent brewing.This paper focuses on the distillation process of Baijiu,summarizes the distillation mechanism of Baijiu and the experience of traditional distillation process.Based on the traditional technology,this paper analyzes the application of intelligent equipment,automatic control technology and new-generation information technology in Baijiu distillation process,and provides reference for the intelligent planning and transfor-mation of distilleries.
