摘　　要：水作为白酒酿造过程中最主要的原料之一,其质量对白酒的品质有很大影响。本文结合现有国家法律法规、相关标准及文献,总结了白酒酿造用水质量要求及其指标检测方法,对增强白酒酿造用水水质指标检测能力,完善白酒酿造用水安全监控管理体系有一定意义。As one of the most important raw materials in Baijiu making,the quality of water has a great impact on the quality of Bai-jiu.Based on the existing national laws and regulations,relevant standards and documents,this paper summarizes the quality require-ments of Baijiu-making water and its indicator detection methods.This paper is of certain significance for the enhancement of the de-tection ability of quality indicators of Baijiu-making water,and the improvement of the safety monitoring and management system of Baijiu-making water.
