摘 要:测定永康市自酿蒸馏酒(水果烧蒸馏酒和粮食烧白酒)中甲醇、杂醇油及塑化剂含量,分析评价其质量现状,为酒类食品安全提供科学依据。采用气相色谱仪测定蒸馏酒中甲醇、杂醇油含量,依据GB 5009.271—2016《食品安全国家标准食品中邻苯二甲酸酯的测定》对抽取的蒸馏酒中的塑化剂进行测定,以市场监管总局关于食品中塑化剂污染风险防控的指导意见作为限量参考。结果表明:水果烧蒸馏酒中甲醇杂醇油偏高;水果烧蒸馏酒中塑化剂检出率48.6%,超标率25.7%,粮食烧白酒中检出率34.8%,超标率12.6%,邻苯二甲酸二丁酯(DBP)和邻苯二甲酸二异辛酯(DEHP)是主要超标项目。永康市售自酿蒸馏酒甲醇杂醇油整体良好,水果烧蒸馏酒中甲醇有部分超过国家标准,粮食烧白酒中甲醇远低于国家标准;塑化剂存在一定程度污染,自酿白酒作坊,一般生产环境简陋,在生产工艺规范性上其与规模化企业存在明显差距,应继续加大监管力度不断提高优化生产工艺,确保酒类安全。The amount of methanol,fusel oil and plasticizer of homemade distilled liquor(fruit distilled liquor and grain liquor)in Yongkang City were determined,and their quality status was evaluated to provide scientific basis for alcoholic food safety.The content of methanol and fusel oil in distilled liquor was determined by gas chromatograph,and the plasticizers were detected according to GB 5009.271-2016 National Food Safety Standard for the Determination of Phthalates in Food.The guidance of the state administration for market regulation on the prevention and control of the pollution risk of plasticizer in food was used as a limited reference.The results showed the content of methanol and fusel oil in fruit distilled liquor was high;The detection rate of plasticizer in fruit distilled liquor was 48.6%,and the over standard rate was 25.7%;The detection rate in grain liquor was 34.8%,and the over standard rate was 12.6%.The main items over standard were dibutylphthalate(DBP)and diisooctyl phthalate(DEHP).The methanol and fusel oil of distilled liquor sold in Yongkang's homemade distilled are generally good,some of the methanol in fruits distilled liquor is the national standard,and the methanol in grain liquor is far below the national standard;There are different degrees of migration pollution of plasticizers;The self-brewed liquor workshop generally has a simple production environment.There is a clear gap between it and large-scale enterprises in the standardization of production process.It is necessary to increase supervision,and to continuously improve and optimize the production process to ensure the safety of wine.
