褪黑素处理对采后桑葚质构性能的影响

摘  要:为明确褪黑素处理对采后桑葚质构性能的作用效果,采用质构仪质地多面分析(TPA)测试法对经不同浓度褪黑素(0μmol/L、200μmol/L、500μmol/L、1000μmol/L和2000μmol/L)处理后4℃下放置不同时间的冀果501(又名安葚)进行质构分析。结果表明:随着贮藏时间的延长,桑葚贮藏品质不断下降,质构特性参数均呈现下降趋势,弹性、胶黏性与内聚性、咀嚼性均显示显著的相关性,硬度、内聚性、咀嚼性3个质构参数间均具有显著的相关性。综合指标分析表明,500μmol/L褪黑素溶液处理桑葚质构综合性能最佳,能够延缓采后桑葚果实质地变化。In order to clarify the effect of melatonin treatment on the texture properties of mulberry fruit,the texture analysis of Jiguo 501(alias Anshen)treated with melatonin(0,200,500,1000 and 2000μmol/L)at 4℃at different time was analyzed by texture analyzer.The results showed that the storage quality of mulberry and the texture characteristic parameters decreased with the extension of storage time.There was a significant correlation between springiness,gumminess and cohesiveness,chewiness.There was a significant correlation among hardness,cohesiveness and chewiness.Comprehensive indicator analysis shows that 500μmol/L melatonin solution has the best comprehensive performance in the treatment of mulberry texture,which can delay the substantial changes in mulberry after harvest.
