摘 要:目的:明确川产木姜子新鲜果实挥发油的主要成分及其抗氧化活性,为木姜子的开发利用提供理论依据。方法:利用单因素试验和正交试验优化水蒸气蒸馏法挥发油的提取工艺,通过GC-MS检测挥发油中的主要成分,采用羟自由基(·OH)和1,1-二苯基-2-三硝基苯肼(DPPH·)清除试验测定其抗氧化活性。结果:木姜子鲜果挥发油得率在加热时间6 h,料液比1∶20 g/mL的条件下达到最优,其得率为4.59%。GC-MS分析木姜子鲜果挥发油中的主要成分为柠檬醛、芳樟醇和柠檬烯。抗氧化试验测得其·OH和DPPH·清除能力的IC_(50)分别为19.650 mg/mL和18.994 mg/mL。结论:优化后木姜子鲜果挥发油的提取工艺稳定、可靠,通过GC-MS分析发现木姜子鲜果挥发油中含有丰富的芳香化合物和抗氧化物质,说明木姜子可以作为天然食品添加剂的原料。Objective:To clarify the main components and antioxidant activity in the volatile oil of fresh Litsea pungens Hemsl.produced in Sichuan,and to provide a theoretical basis for the development and utilization of Litsea pungens Hemsl.Methods:The extraction conditions of volatile oil with steam distillation were optimized by single factor experiment and orthogonal experiment.The main components in the volatile oil were detected by GC-MS.The hydroxyl radical(·OH)and 1,1-diphenyl-2-picrylhydrazyl(DPPH·)scavenging experiments were used to determine its antioxidant activity.Results:The optimal yield of volatile oil was 4.59%when the heating time was 6 h and the ratio of solid to liquid was 1∶20 g/mL.The main components of the volatile oil were citral,linalool and limonene.The IC_(50) of its·OH and DPPH·scavenging abilities were measured as 19.650 mg/mL and 18.994 mg/mL,respectively.Conclusion:With the optimized conditions,the extraction process of the volatile oil of the Litsea pungens Hemsl.was stable and reliable.The GC-MS analysis showed that the volatile oil of Litsea pungens Hemsl.was rich in aromatic compounds and antioxidants,indicating that Litsea pungens Hemsl.can be used as a raw material for natural food additives.
