摘  要:建立高效液相色谱法检测液态奶中的6种增香剂,包括麦芽酚、乙基麦芽酚、香兰素、乙基香兰素、甲基香兰素、香豆素含量的分析方法。1.00 g液态奶样品经4%乙酸-乙腈溶液进行2次超声提取(5 mL+5 mL),上清液在30℃下进行氮吹浓缩后,经过C18柱分离,用二极管阵列检测器进行检测,在检测波长为275 nm下进行扫描分析,外标法定量。结果显示,高效液相色谱法检测液态奶中6种增香剂的方法检出限为0.05~2 mg/kg,在相应的浓度范围内均具有良好的线性关系,当麦芽酚的添加水平为5、10、20μg/mL,乙基麦芽酚的添加水平为10、20、40μg/mL,香兰素、乙基香兰素、甲基香兰素和香豆素的添加水平为1、5、10μg/mL时,方法回收率为72.5%~93.9%,RSD在1.07%~3.50%(n=6)。该方法操作简便快速、准确、重现性好,适用于测定液态奶中的6种增香剂的含量。To establish a method for the determination of 6 kinds of flavor enhancers including Maltol,Ethyl Malto,Vanillin,Ethyl Vanillin,Methyl Vanillin,Coumarin in liquid milk by high performance liquid chromatography.1.00 g of liquid milk sample was extracted by ultrasonic twice with 4%acetic acid acetonitrile solution(5 mL+5 mL),and the supernatant was concentrated by nitrogen blowing at 30℃,separated by C18 column,and determined by photo-diode array at 275 nm wavelength with external standard method for quantification.The limits of the detection(LOD)of the 6 kinds of flavor enhancers which were detected by high performance liquid chromatography in liquid milk were 0.05-2 mg/kg.They had good linear relationships in the corresponding concentration range.The recoveries of the 6 kinds of flavor enhancers were all between 72.5%-93.9%when maltol was spiked at 5,10 and 20μg/mL,ethyl maltol was spiked at 10,20 and 40μg/mL and spiked at 1,5 and 10 mg/kg in the other 4 kinds of objects to be tested.The relative standard deviations of the method were less than 3.50%(n=6).This method is simple,rapid,accurate,and repeatable,which can be used for analysis of 6 kinds of flavor enhancers in liquid milk.
