摘 要:采用聚乙二醇(PEG)/硫酸铵双水相技术萃取桑葚花色苷,以萃取率为指标,通过单因素试验考察了料液比、超声时间、浸提温度和硫酸铵质量分数对萃取桑葚花色苷的影响,进一步通过正交试验优化萃取条件。结果表明,PEG/(NH_(4))_(2)SO_(4)双水相萃取桑葚花色苷的最佳工艺为料液比1:30、超声时间50 min、浸提温度50℃、硫酸铵质量分数20%。该工艺条件下桑葚花色苷的萃取率为96.01%。该工艺提取得到的桑葚花色苷稳定可行,结果重现性好。Anthocyanins were extracted from mulberry by polyethylene glycol(PEG)/ammonium sulfate aqueous two-phase system.The effects of solid-liquid ratio,ultrasonic time,extraction temperature and mass fraction of ammonium sulfate on the extraction rate of mulberry anthocyanins were investigated by single factor test,and the extraction conditions were further optimized by orthogonal test.The results showed that the optimum extraction process of mulberry anthocyanin by PEG/(NH_(4))_(2)SO_(4) aqueous two-phase extraction was as follows:solid-liquid ratio 1:30g/ml,ultrasonic time 50 min,extraction temperature 50℃and mass fraction of ammonium sulfate 20%.The extraction rate of mulberry anthocyanin is 96.01%under optimal process conditions.The extraction of mulberry anthocyanin is stable and feasible,and the results have good reproducibility.
