摘  要:目的将灵菌红素应用到抗光氧化膜中,并研究其对油脂光氧化性的抑制作用。方法将Serratia marcescensy2的次级代谢产物提取分离后,经化学反应改造成水溶性的色素。并以一定的质量比添加到基础膜液中,制成环境友好型的抗光氧化性膜,对色素在膜的分布情况、色素保留率及机械性能进行测定,并应用于油脂的抗光氧化。结果激光共聚焦显微镜放大400倍显示,灵菌红素盐酸盐在膜中分布均匀,且成膜后的色素保留率稳定值为74.8%,单因素试验结果表明色素的添加可提高膜的抗拉伸强度至28.8 MPa。响应面试验结果显示成膜的最优工艺参数为羧甲基纤维素钠2.0 g、海藻酸钠1.8 g、甘油1.2 g、灵菌红素盐酸盐0.02%。此时其抗拉强度为20.1 MPa,伸长率为20.3%。将其应用于橄榄油的抗光氧化,相对于无添加色素的膜,在灵菌红素基膜的保护下,橄榄油的过氧化值(peroxide value,POV)可降低41%。结论灵菌红素盐酸盐制成抗光氧化性膜后,色素保留率提高,抗拉伸强度增强。最佳工艺参数制备的抗光氧化特性膜对橄榄油显示出很好抗光氧化作用。Objective To apply prodigiosin in anti-photooxidation film,and explore its inhibitory effect on the photooxidation of oil.Methods The secondary metabolites of Serratia Marcescens y2 were extracted and separated,further transformed into water-soluble pigments by chemical reactions,and added to the basic membrane liquid with a certain mass ratio to fabricate environment-friendly anti-photooxidation film.The distribution of pigment in the membrane,retention rate of pigment and the mechanical properties of the membrane were measured,and the anti-photooxidation film was applied to the photooxidation resistance of oil.Results A 400-fold magnification of laser confocal microscopy showed that the distribution of prodigiosin hydrochloride in the film was uniform,and the pigment retention rate was stable to 74.8%after film formation.Single factor experiment results showed that the addition of pigment could improve the tensile strength of the film to 28.8 MPa.The results of response surface experiment showed that the optimal process parameters of film formation were sodium carboxymethyl cellulose 2.0 g,sodium alginate 1.8 g,glycerol 1.2 g,prodigiosin hydrochloride 0.02%.The tensile strength and elongation of the verification experimental results were 20.1 MPa and 20.3%,respectively.It was applied to the anti-photooxidation experiment of olive oil,and the experimental results showed that the peroxide value(POV)of olive oil could be reduced by 41%with the retention of the prodigiosin-based films compared with the film without added pigment.Conclusion The pigment retention rate and tensile strength have been improved after prodigiosin hydrochloride fabricated to the anti-photooxidation film.The anti-photooxidation films prepared by optimum process parameters shows good photooxidation resistance to olive oil.
