响应面法优化甘蔗芭蕉复合发酵液的制备工艺

摘  要:以甘蔗和芭蕉为主要原料,利用酵母菌和乳酸菌复合发酵,以感官评分为评价指标,在单因素试验的基础上探究酵母菌和乳酸菌发酵对甘蔗芭蕉复合发酵液品质的影响,再分别通过响应面法和正交试验法对发酵工艺进行优化,并对该复合发酵液进行了抗氧化性能测定。结果表明:酵母菌发酵最优工艺条件为初始糖度16%,酵母菌添加量0.5%,发酵温度30℃,发酵时间22h;乳酸菌发酵最优工艺条件为乳酸菌添加量3.0%,发酵时间12h,发酵温度43℃。在此条件下制备的甘蔗芭蕉复合发酵液呈淡黄色,酸甜适口,香气协调,组织状态良好,产品的pH、可溶性固形物、总酸分别为4.2、13.5%、3.95 g/100mL,DPPH自由基清除率60.97%,对羟自由基清除率45.09%,超氧阴离子自由基清除率50.7%,说明该复合发酵液具有一定的抗氧化能力。The fermentation process was optimized using yeast and lactic acid bacteria,using sugarcane and plantain as the prime raw materials.The effect of their fermentation on sugarcane and plantain fermentation solution quality was investigated based on the single-factor test.The results showed that the optimum conditions for yeast fermentation were 16%initial brix,0.5%yeast addition,30℃fermentation temperature,and 22 h fermentation time;the optimum conditions for lactic acid bacteria fermentation were 3%lactic acid bacteria addition,12 h fermentation time and 43℃fermentation temperature.The sugarcane plantain composite fermentation broth prepared under these conditions was light yellow in color,sweet and sour,with a harmonious aroma and good organization.The pH,soluble solids,and total acidity of the product were 4.2,13.5%,and3.95 g·100 mL~(?1),respectively,with a scavenging rate of 60.97%for DPPH radicals,45.09%for hydroxyl radicals and 50.7%for superoxide anion radicals,indicating that the complex fermentation broth has some antioxidant ability.
