摘  要:黄酒上清液和酒脚中金属元素含量有较大差异,下层酒脚中钛、镁、钙、钾、钠、铁、铝元素含量明显高于上层清酒。硅藻土生产工艺对金属元素含量有较大影响,助熔煅烧硅藻土中镁、钾、铝、铁、钙、钛元素含量分别为煅烧硅藻土的12%、38%、24%、8%、60%、5%。经硅藻土过滤后酒中钠、钛、铁、铝元素含量变化较大。对酒沉淀与酒中金属含量进行相关性分析,发现酒中沉淀量与铁、钠具有强正相关性,与钛、铝有着较强正相关性,与钙相关性不明显。The content of metal elements in the supernatant and bottom of Huangjiu is quite different,and the content of Ti,Mg,Ca,K,Na,Fe,Al in the bottom is significantly higher than that in the supernatant.The production process of diatomite has a great influence on the content of metal elements.The content of Mg,K,Al,Fe,Ca and Ti in the assisted-melting calcined diatomite is 12%,38%,24%,8%,60% and 5% of the calcined diatomite respectively.The content of Na,Ti,Fe and Al in Huangjiu changed greatly after diatomite filtration.The correlation analysis between precipitation and metal elements content in Huangjiu show that the precipitation has a strong positive correlation with the content of Fe and Na,has a positive correlation with Ti and Al,and has no obvious correlation with Ca.
