摘  要:为了研究主动自发气调对油桃常温保鲜效果的影响,本试验设置3组不同初始比例的混合气体,分别为10%O_(2)+5%CO_(2)、5%O_(2)+5%CO_(2)和3%O_(2)+5%CO_(2),以空气为对照(CK)。将4组试样放置于(20±1)℃的温度下,定期测定气调箱内O_(2)和CO_(2)含量,油桃的呼吸强度、色度、硬度、相对电导率,以及丙二醛、可滴定酸、总糖、乙醇、乙醛含量等指标。结果表明,3%O_(2)+5%CO_(2)处理可以明显降低果实的呼吸强度,抑制相对电导率和丙二醛含量的提高,较好地维持果实的感官品质及口感,减少营养物质的流失,同时抑制乙醇、乙醛含量的积累,延缓异味的产生,为油桃常温物流运输保鲜提供了参考依据。In order to study the effect of active modified atmosphere on the fresh-keeping of nectarine under room temperature storage,three groups of mixed gases with different initial ratios were set in this experiment,which were 10%O_(2)+5%CO_(2),5%O_(2)+5%CO_(2)and 3%O_(2)+5%CO_(2),respectively,with air as control(CK).The O_(2)and CO_(2)content in containers,the respiratory rate,chroma,hardness,relative conductivity,the contents of malondialdehyde,titratable acid,total sugar,ethanol,and acetaldehyde and other indicators of nectarine were regularly measured during(20±1)℃storage.The results showed that 3%O_(2)+5%CO_(2)treatment could significantly reduce the respiratory rate,inhibit the increase of relative conductivity and malondialdehyde content,maintain the sensory quality and nutrients,inhibit the accumulation of ethanol and acetaldehyde content,delay the off-odor generation of nectarine.This study provided a reference for the preservation of nectarine during logistics transportation under room temperature.
