摘 要:为研究粗纤维水平对定安鹅胸肌纤维性状及肉品质的影响,选取144只70日龄定安鹅公鹅,随机分为3组,每组4个重复,每重复12只。分别饲喂粗纤维水平为6.30%、8.25%和10.15%的饲粮,试验期35 d。结果表明:(1)与6.30%组相比,10.15%组定安鹅胸肌肌纤维总横截面积、8.25%组胸肌肌纤维密度分别提高24.16%和20.22%(P<0.05)。(2)8.25%组胸肌pH45 min和pH24 h比10.15%组各降低2.71%和2.90%(P<0.05);8.25%组胸肌剪切力较6.30%和10.15%组分别降低15.09%和17.47%(P<0.05)。(3)与6.30%和10.15%组相比,8.25%组定安鹅胸肌水分含量分别提高16.57%和24.11%(P<0.05);10.15%、8.25%组定安鹅胸肌粗蛋白质水平比6.30%组分别增加5.71%和7.81%(P<0.05)。10.05%组定安鹅胸肌肌苷酸含量较8.25%组提高50.77%(P<0.05)。(4)与6.30%和8.25%组相比,10.15%组胸肌苯丙氨酸含量分别升高5.88%和7.14%(P<0.05)。综上所述,8.25%~10.15%粗纤维水平可改善定安鹅肌纤维特性及肉品质。In order to study the effects of crude fibre level on breast muscle fibre characteristics and meat quality of Ding’an goose,one hundred and forty-four 70-day-old male Ding’an geese were randomly assigned into 3 groups with 4 replicates per group and 12 geese per replicate.Geese were fed the diets containing 6.30%,8.25%and 10.15%levels of crude fibre,respectively.This experiment lasted for 35 days.The results showed that:(1)Compared with 6.30%group,muscle fibers total cross-sectional area of breast muscle in 10.15%group,and muscle fibre density of breast muscle in 8.25%group were increased by 24.16%and 20.22%(P<0.05),respectively.(2)pH45 min and pH24 h of breast muscle in 8.25%group were decreased by 2.71%and 2.90%in comparison to 10.15%group(P<0.05),respectively;shearing force of breast muscle in 8.25%group was reduced by 15.09%and 17.47%in comparison to 6.30%and 10.15%groups(P<0.05),respectively.(3)Compared with 6.30%and 10.15%groups,moisture content of breast muscle in 8.25%group was promoted by16.57%and 24.11%(P<0.05),respectively;crude protein levels of breast muscle in 8.25%and 10.15%groups were heightened by 5.71%and 7.81%in comparison to 6.30%group(P<0.05),respectively;inosinic acid content of breast muscle in 10.15%group was raised by 50.77%in comparison to 8.25%group(P<0.05).(4)Compared with 6.30%and 8.25%groups,phenylalanine level of breast muscle in 10.15%group was increased by 5.88%and 7.14%(P<0.05),respectively.In conclusion,8.25%~10.15%levels of crude fibre could improve breast muscle fibre characteristics and meat quality of Ding’an goose.
