摘　　要：蛋粉具有较好的口感和较高的营养价值而广泛应用于食品工业。目前市场上蛋粉质量参差不齐,假冒伪劣现象时有发生,因此对蛋粉质量进行检测具有重要研究意义。文章从蛋粉的理化指标检测技术和掺假检测技术两个方面对蛋粉质量检测技术进行了综述,并对蛋粉质量检测技术的发展进行了展望,以期能为研究高效、准确的蛋粉质量检测技术提供参考。Egg powder is widely used in food industry because of good taste and high nutritional value.The quality of egg powder is uneven and fake in the market,it is important for the detection of egg powder quality.In this paper,the research prog⁃ress of physicochemical index detection technology and adulteration detection technology were summarized,and the development of egg powder quality detection technology was prospected.The results might provide reference for the research of efficient and ac⁃curate egg powder quality detection technology.
