真姬菇热泵干燥特性及数学模型研究

摘　　要：为了初步探明真姬菇热泵干燥过程的变化规律。研究不同风温、风速及装载量对真姬菇干燥品质的影响,得出真姬菇热泵干燥特性曲线,并通过软件拟合,建立真姬菇热泵干燥动力学模型。结果表明:干燥过程主要由降速和恒速阶段构成;随着热泵干燥风温和风速增加,干燥时间缩短,而随装载量增加,干燥时间延长。与传统的热风干燥相比,使用热泵干燥真姬菇具有较低的收缩率和更大的复水率,以及更好的感官品质;Page模型适用于描述真姬菇热泵干燥过程。研究结果可知真姬菇热泵干燥时间与风温和风速负相关,与装载量正相关,真姬菇热泵干燥动力学模型符合Page方程。In order to preliminarily explore the change rule of heat pump drying process of Hypsizygus marmoreus,the effects of different wind temperature,wind speed and loading capacity on the drying quality of Hypsizygus marmoreus were studied to obtain the heat pump drying characteristic curve of Hypsizygus marmoreus.Then,the heat pump drying kinetic model of Hypsizygus marmoreus was established by using the software fitting.The results showed that the drying process was mainly composed of falling rate period and constant rate period.With the increase of wind temperature and wind speed,the drying time was shortened;while with the increase of loading capacity,the drying time was prolonged.Compared with the traditional hot air drying,the use of heat pump drying Hypsizygus marmoreus had lower shrinkage rate,greater rehydration rate,and better sensory quality.The Page model was suitable for describing the heat pump drying process of Hypsizygus marmoreus.The results showed that the heat pump drying time of Hypsizygus marmoreus was negatively correlated with the wind temperature and wind speed,and positively correlated with the loading capacity.The heat pump drying kinetic model of Hypsizygus marmoreus conformed to the Page equation.
