摘  要:环糊精因其特殊的性质而备受食品、化妆品和制药等行业的青睐。对环糊精的巨大需求也使其生产所必需的环糊精葡萄糖基转移酶(CGTase,EC2.4.1.19)成为人们关注的热点。目前,对该酶的研究多集中在作用机制、菌株筛选等方面,从发酵生产到分离提纯的系统性报道并不多见,因此,结合国内外对CGTase的大量研究工作和中国的资源优势,笔者以CGTase的发酵生产和分离提纯为出发点,以环糊精产业未来的商业需求为基础,对优质CGTase的发酵生产和提纯方法进行了综述,同时对该领域的未来研究进行了展望。Cyclodextrin has been favored by food,cosmetics,medicine and other industries because of its special nature.The huge demand for cyclodextrin has also made the cyclodextrin glucosyltransferase(CGTase,EC2.4.1.19)necessary in its production hotspot.At present,the research on this enzyme mostly focuses on the mechanism of action and strain screening,with few systematic reports ranging from fermentation production and separation and purification.Therefore,the author started from the fermentation production and separation and pu⁃rification of CGTase based on the commercial demands of cyclodextrin industry,and summarized the methods of high-quality CGTase fermentation production and purification in the future.At the same time,combined with the large number of CGTase research work at home and abroad,as well as the resource advantages of China,the au⁃thor put forward some ideas for the future research in this field.
