麻栎树籽淀粉提取工艺优化及其性质分析

摘  要:利用碱性蛋白酶提取麻栎树籽淀粉。在单因素试验的基础上通过正交试验优化制备麻栎树籽淀粉的工艺条件,并分析其理化性质。结果表明:最佳工艺条件为pH 11.0、酶解温度55℃、酶解时间100 min、酶用量0.4%(以麻栎树籽粉质量计),在此条件下麻栎树籽淀粉得率为81.34%,淀粉糊透光率为6.72%,在90℃的溶解率为12.87%,弹性比小麦淀粉糊大,黏附性和硬度比小麦淀粉糊小。Alkaline protease was used to extract Quercus acutssima Carruth.seed starch.On the basis of single factor experiment,the technological conditions of preparing Quercus acutssima Carruth.seed starch were optimized by orthogonal experiment,and its physicochemical properties were analyzed.The results showed that the optimum technological conditions were pH 11.0,enzymolysis temperature 55℃,enzymolysis time 100 min,enzyme dosage 0.4%(based on the mass of Quercus acutissima Carruth.seed powder).Under these conditions,the yield of Quercus acutissima Carruth.seed starch was 81.34%,the light transmitance of starch paste was 6.72%,the solubility at 90℃ was 12.87%,the elasticity was greater than that of wheat starch paste,and the adhesion and hardness were smaller than that of wheat starch paste.
