摘  要:本研究针对浓香型原酒中己酸乙酯和乙酸乙酯量比关系失调的共性技术问题,在优化生产工艺与强化质量管理的基础上,对蒸馏取酒工序实施甑桶结构与分段摘酒两步改良法。结果表明,通过甑桶内壁加装木片及改造甑底蒸汽分布器的方式,能有效改善因甑内糟醅径向热传导不均引起的甑边效应现象,“六分法”分段摘酒法可辅助协调各馏段中主要馏分特别是己酸乙酯与乙酸乙酯、乳酸乙酯间的量比关系,使得综合原酒己酸乙酯/乙酸乙酯由1∶1.2~2降至1∶1.0~1.6,优级酒收得率提高约2%,有效提高摘酒准确性和原酒质量。Aiming at the common technical problem of improper quantity ratio of ethyl caproate to ethyl acetate,we optimized the production process,strengthened quality management,and improved the structure of the steamer and the distillation process.The re-sults showed that,by installing wood chips on the inner wall of the steamer and reforming the steam distributor,the steamer rim effect caused by uneven radial heat transfer was improved;the application of the“six-section method”could adjust the quantity ratio of eth-yl caproate to ethyl acetate from 1∶1.2-2 to 1∶1.0-1.6,and the yield of high-quality liquor increased by about 2%.This method had effectively improved the liquor-gathering accuracy and the quality of the crude liquor.
