摘  要:采取文献资料汇总、产品概况调研分析手段,从技术理论和实际应用角度,探析电磁加热食品技术乃至电磁烹饪设备的总体概况。基于文献资料汇总法,聚焦新型电加热食品技术,从技术原理、技术特点、技术影响因素及应用现状等角度,对比分析电磁感应加热食品技术的特点与优势。针对不同品牌的电磁烹饪设备,聚焦典型家用和商用型设备开展产品概况调研,汇总并形成产品类别、主要功能及总体指标参数目录。汇总分析结果,可为快速把握市场相关产品概况、紧贴实际应用需求准确聚焦技术热点、及时形成技术能力提供信息支撑。The overall development of electromagnetic heating food technology and even electromagnetic cooking technology is analyzed from the perspective of technical theory and practical application by means of literature summary and product profile research.Based on the literature summary method,focusing on the new electric heating food technology,the characteristics and advantages of electromagnetic induction heating food technology are compared and analyzed from the perspectives of technical principles,technical characteristics,technical influencing factors and application status.Aiming on different brands of electromagnetic cooking equipment,a product profile research is carried out focusing on typical household and commercial equipments.A catalog of product categories,key functions and overall indicator parameters is summarized.The summary and analysis results can provide information support for quickly grasping the related product overview of the market,accurately focusing on technical hotspots closely to the actual application needs,and timely forming technical capabilities.
