摘　　要：目的:了解潍坊市市售动物性水产品及其制品有毒金属(铅、镉、汞、砷)污染情况,及时发现存在的安全隐患并提出风险预警。方法:2013-2022年在养殖场、捕捞场所、超市、农贸市场采集甲壳类、鱼类、软体类水产品及水产制品类434份样品,依据国家标准测定样品中铅、镉、总汞(甲基汞)、总砷(无机砷)的含量,采用单因子污染指数评价污染状况。结果:总汞、总砷的检出率为83.23%、93.68%,铅污染水平92.95%处于正常背景值范围,甲壳类镉污染水平39.13%处于重度污染范围。结论:2013-2022年潍坊市动物水产品镉的含量较高,甲壳类、鱼类、软体动物的镉均有超标。Objective:To investigate the pollution situation of toxic metals(lead,cadmium,mercury,arsenic)in animal aquatic products and their products sold in Weifang City,and to find out the hidden danger in time and put forward the risk warning.Method:434 samples of crustaceans,fish,mollusc aquatic products and aquatic products were collected from aquaculture farms,fishing sites,supermarkets and farmers’markets from 2013 to 2022.According to national standards,the contents of lead,cadmium,total mercury(methylmercury)and total arsenic(inorganic arsenic)in the samples were determined,and the pollution status was evaluated by single factor pollution index.Result:The detection rates of total mercury and total arsenic were 83.23%and 93.68%.Lead pollution level was 92.95%in the normal background value range,and cadmium pollution level of crustaceans was 39.13%in the severe pollution range.Conclusion:The cadmium content of animal and aquatic products in Weifang city from 2013 to 2022 is relatively high,and the cadmium content of crustaceans,fish and mollusks has exceeded the standard.
