摘 要:结冷胶是由少动鞘氨醇单胞菌有氧发酵合成的一种微生物多糖,凭借其优良的理化性质广泛应用在食品、医药等多个领域。综述了结冷胶生物合成途径、结冷胶高产菌株的改造及结冷胶的应用前景。主要分析了结冷胶生物合成过程中糖核苷酸前体的合成、四糖单元的组装、聚合和结冷胶的输出,以及所涉及到的关键基因及其功能,论述了结冷胶生产菌株构建手段,同时对结冷胶的应用进行了总结和展望。以期为结冷胶的工业化生产和应用提供科学参考。Gellan gum is a microbial polysaccharide synthesized by aerobic fermentation of Sphingomonas paucimobilis.It is widely used in various fields such as food and medicine due to its excellent physical and chemical properties.In this paper,the biosynthetic pathway of gellan gum,modification of gellan gum high-yield strain and application prospects of gellan gum are reviewed.The key genes and their functions involve in the synthesis of sugar nucleotide precursors,assembly and polymerization of tetrasaccharide units and the output of gellan gum were mainly described.The means of constructing strains for the production of gellan gum is discussed,and the application of gellan gum is summarized and prospected.It is expected to provide scientific reference for the industrial production and application of gellan gum.
