摘 要:目的探讨《食品理化检验》实验课程引入虚拟仿真实验的教学模式、教学效果及改进措施。方法重庆医科大学公共卫生学院于2021年5月为61名2018级卫生检验与检疫专业本科生开设本门课程的“高效液相色谱法测定饮料中的添加剂”实验,并对授课学生的学习情况进行问卷调查,分析教学模式和效果。结果共回收有效问卷177份(96.7%)。一次实验后两组学生的总得分均有所提高,差异有统计学意义(P<0.05)。但两次实验后,学生的问卷Ⅲ得分与一次实验后问卷Ⅱ得分相比差异无统计学意义(P>0.05)。两组学生的实验原理、实验方法的得分在问卷Ⅰ和问卷Ⅱ、问卷Ⅰ和问卷Ⅲ之间进行比较,差异有统计学意义(P<0.05)。对照组的结果计算得分人数在问卷Ⅰ和问卷Ⅱ、问卷Ⅰ和问卷Ⅲ之间进行比较,差异有统计学意义(P<0.05)。试验组的结果计算得分人数在3份问卷之间比较,差异无统计学意义(P>0.05)。26名(46.4%)学生认为虚拟仿真实验教学方式更有利于学生理解检测仪器的结构;35名(62.5%)学生认为实体实验教学方式更有利于学生理解检测仪器的使用方法;虚拟仿真实验教学和实体实验教学在帮助学生理解实验原理方面效果相当。结论本课程引入虚拟仿真实验的虚实结合新型混合式教学模式很大程度上填补了传统本科实验教学中的空缺。在此基础上仍需持续改进,进一步提高教学效果及质量。Objective To discuss the teaching mode,teaching effect and improvement measures of the experimental course of Physical and Chemical Analysis of Food by introduction of virtual simulation experiment.Methods In May 2021,the School of Public Health of Chongqing Medical University launched the experiment of"determination of additives in beverage by high-performance liquid chromatography"of this course for 61 undergraduates majoring in Health Inspection and Quarantine,class of 2018,and a questionnaire survey was conducted to the students to analyze the teaching mode and effect.Results A total of 177 valid questionnaires(96.7%)were collected.After one experiment teaching,the total scores of the two groups of students were improved,and the difference was statistically significant(P<0.05).However,there was no significant difference between the score of questionnaireⅢafter two experiment teaching and the score of questionnaireⅡafter one experiment teaching(P>0.05).The scores of the experimental principles and experimental methods of the two groups were compared between questionnairesⅠand questionnaireⅡ,questionnairesⅠand questionnaireⅢ,and the difference was statistically significant(P<0.05).The results calculation of the first group were compared between questionnaireⅠand questionnaireⅡ,questionnaires I and questionnaireⅢ,and the difference was statistically significant(P<0.05).The results calculation of the second group were compared between the three questionnaires,and there was no significant difference(P>0.05).26 students(46.4%)thought that virtual simulation experiment teaching method was better for students to understand the structure of detecting instruments,while 35 students(62.5%)thought that the physical experiment teaching method was more conducive to students'understanding of the use of detecting instruments.Virtual simulation experiment teaching and physical experiment teaching were equally effective in helping students understand experimental principles.Conclusion A new hybrid teaching mod
