摘 要:参考GB/T 13662-2018《黄酒》亚铁氰化钾滴定法检测原理,在试剂配制过程中,分别在斐林试剂甲液中加入次甲基蓝,斐林试剂乙液中加入亚铁氰化钾,解决了因样品中色素造成的滴定终点判定干扰问题,方法操作更便捷。通过对显色剂添加量、添加时机等条件的优化及确认,滴定终点颜色变化更为明显,易于判别,方法精密度和准确度均满足方法学要求。经验证,该方法可实现葡萄酒、蓝莓酒、桑葚酒、百香果酒、青梅酒等果酒的总糖含量检测,方法相对标准偏差为0.19%~0.51%,加标回收率为96.10%~100.95%。Referring to the detection principle of potassium ferrocyanide titration method provided in the national standard for Huangjiu(GB/T 13662-2018),methylene blue is added to Fehling's A solution,and potassium ferrocyanide is added to Fehling's B solution to solve the problem of disturbance of titration end point by pigments.Through optimization of conditions such as the addition amount and timing of the color developing agent,the color change at the titration end point becomes clearer,and easier to observe.The precision and accuracy of the method meet the methodological requirements.Verification tests show that the method can be used in the detection of the total sugar content in fruit wines such as grape wine,blueberry wine,mulberry wine,passion fruit wine,and green plum wine.The relative standard deviation of the method is between 0.19%and 0.51%,and the spiked recovery rate is 96.10%to 100.95%.
