摘  要:为探索微波场辅助提取火龙果果皮色素的可行性和工艺参数,采用微波场辅助技术提取红皮白肉火龙果果皮中的红色素;然后以热风干燥的火龙果果皮粉末为原料,以吸光度作为提取评价指标,通过单因素试验考察乙醇体积分数、料液比、pH值、微波功率、微波时间5个因素对色素提取效果的影响,确定正交参数范围;通过正交试验,得出微波场辅助提取火龙果果皮红色素的最优工艺.研究结果表明:影响火龙果果皮红色素提取效果的因素由主及次为微波功率>微波时间>料液比>乙醇体积分数,最优微波提取工艺参数为乙醇体积分数55%、料液比1∶70、微波功率240 W、微波时间30 s.To explore the feasibility and technological parameters of microwave-assisted extraction of pigment from pitaya peel,the microwaves used as an auxiliary technique was applied to extract the red pigments in the red skin and white flesh pitaya peels wastes.The hot air-dried pitaya peels powders were used as the raw materials and values measured with optical density were used as the evaluation indicator.The orthogonalexperiments parameters used to evaluate the pigments extraction effects were determined by five single-factor experiments including the ethanol concentration,the solid-liquid ratio,pH,the microwave power and the microwaving time.The best extraction method with the aid of the microwave was engendered after the orthogonalexperiments were evolved.The results showed that microwave power,microwave time,solid liquid ratio and ethanol concentration were the factors from the best to the worst affecting the extraction of red pigment from pitaya peels,and the parameters of the optimal extraction method with the assistant of microwave were shown the ethanol concentration of 55%,the solid-liquid ratio of 1:70,the microwave power of 240 W and the microwave time of 30 s.
