摘 要:研究旨在比较3种规格花鳗鲡肌肉常规营养成分、氨基酸含量和脂肪酸组成的差异情况。实验选用投喂相同饲料而不同规格的24尾花鳗鲡,分为10P组(体重约100 g/尾)、4P组(体重约250 g/尾)、2.5P组(体重约400 g/尾),进行肌肉基本营养成分、氨基酸含量和脂肪酸组成测定和分析,每个组8重复。结果表明:2.5P组的粗蛋白含量最高;10P组粗脂肪含量最高;氨基酸总量高低依次为4P组(64.99%)>2.5P组(62.52%)>10P组(60.84%),4P组必需氨基酸总量、非必需氨基酸总量和鲜味氨基酸总量均最高;花鳗鲡肌肉多不饱和脂肪酸中的二十碳五烯酸与二十二碳六烯酸之和所占比例由高到低分别为4P组(10.64%)>2.5P组(9.80%)>10P组(9.06%)。结果表明,3种规格花鳗鲡肌肉营养价值存在一定差异,4P花鳗鲡肌肉营养价值总体上最高。The aim of this study was to compare the differences of nutritional components,amino acid contents and fatty acid compositions in the muscle of marbled eel(Anguilla marmorata)with different body weight.Twenty-four Anguilla marmorata with different body weight were divided into three groups.They were 10P group(body weight about 100 g/fish),2.5P group(body weight about 250 g/fish),and 2.5P group(body weight about 400 g/fish),respectively.The muscle samples of those eels were determined the premix nutrients,amino acid content,and fatty acid composition.There were eight replicates per group.The results indicated that the crude protein content of 2.5P group was the highest among all groups.The highest content of crude fat was found in 10P group.The highest levels of total essential amino acids,the total non-essential amino acids and the total umami amino acids were found in the 4P group,the order of total amino acids levels in three body weight of Anguilla marmorata was 4P group(64.99%)>2.5P group(62.52%)>10P group(60.84%).The order of proportions of the total eicosapentaenoic acid and docosahexaenoic acid in Polyunsaturated fatty acid was 4P group(10.64%)>2.5P group(9.80%)>10P group(9.06%).In conclusion,the results indicated that there were obvious differences of nutrition in muscle among the different body weight of marbled eels,and the 4P marbled eels might have the highest nutritional value.
