摘  要:无花果作为一种广受欢迎的水果,在冷藏保鲜过程中往往面临质地变化、营养流失、微生物生长和褐变等问题,影响其品质和市场价值。为解决无花果易变质的问题,壳聚糖涂膜技术作为一种新兴的冷藏保鲜技术备受关注。壳聚糖涂膜能够形成一层保护性薄膜,为果实提供保护,可延长其贮藏期限,并有助于其保持口感、营养价值和外观特征。本文旨在概述壳聚糖涂膜技术在无花果冷藏保鲜中的应用,以期为无花果的贮藏和保鲜提供科学依据和技术支持。Ficus carica,as a popular fruit,is often confronted with texture changes,nutrient loss,microbial growth and browning during cold storage,which affects its quality and market value.In order to solve the problem of fig spoilage,chitosan coating technology has attracted much attention as an emerging refrigeration and preservation technology.Chitosan coating can form a protective film to provide protection for fruits,extend their storage life,and help maintain their taste,nutritional value,and appearance characteristics.This article aims to summarize the application of chitosan coating technology in the cold storage and preservation of figs,in order to provide scientific basis and technical support for the storage and preservation of figs.
