不同品种石斛花茶窨制工艺品质初探

摘　　要：为丰富云南地区茶类,以云南茶叶佛香绿茶、月光白茶、滇红和紫娟红茶为茶坯,铁皮石斛、球花石斛、金钗石斛和鼓槌石斛鲜花为香源,利用石斛鲜花吐香和茶叶吸香的特性,通过单因素试验筛选了在窨制工艺中适宜的配花量和窨制时间。得出了四种石斛花茶最佳窨制工艺技术为:铁皮石斛佛香绿茶茶花比5:2,窨制时间20 h;金钗石斛紫娟红茶茶花比5:2,窨制时间16 h;鼓槌石斛滇红金针茶花比5:3,窨制时间24 h;球花石斛月光白茶茶花比5:3,窨制时间18 h。不同品种石斛花茶的成功研制,丰富了云南花茶种类,为石斛花茶产品的开发提供一定的理论基础。In order to enrich tea category in Yunnan Province,Foxiang green tea,Moonlight white tea,Yunnan Gongfu Black Tea and Zijuan black tea were used as raw materials in this research,while flowers of Dendrobium officinale,Dendrobium thyrsiflorum,Dendrobium nochai and Dendrobium chrysotoxum Lindl were used as the source of fragrance.Single-factor test was conducted to select appropriate amount of fragrant flowers and the scenting time.The results indicated four best process technologies,including 5:2 ratio of Foxiang green tea to Dendrobium officinale flowers with 20 h scenting time;5:2 ratio of Zijuan black tea to Dendrobium nobile flowers with 16 h scenting time;5:3 ratio of Yunnan Gongfu black tea to Dendrobium chrysotoxum Lindl flowers with 24 h scenting time;and 5:3 ratio of Moonlight white tea to Dendrobium thyrsiflorum flowers with 18 h scenting time.The successful development of different varieties of Dendrobium flower tea has enriched the types of Yunnan flower tea and provided certain theoretical basis for the development of Dendrobium flower tea products.
