摘 要:为了解不同生境下长荡湖日本沼虾(Macrobrachium nipponense)的肌肉营养成分与含量,选取长荡湖养殖和野生的日本沼虾各100尾为肌肉样本,采用国家标准生化测定方法分别测定其水分、蛋白质、脂肪、灰分、氨基酸和脂肪酸的含量。结果表明,相较于长荡湖野生虾,养殖虾的肌肉营养成分含量较高。养殖虾和野生虾的水分含量分别为76.62%、76.63%,蛋白质含量为18.38%、13.84%,脂肪含量为0.67%、0.65%,灰分含量为1.25%、0.97%。养殖虾和野生虾测出氨基酸17种,其中谷氨酸和甘氨酸含量最高,每100 g氨基酸总量分别为21.72、21.29 g。测出脂肪酸17种,其中饱和脂肪酸含量为23.96%和25.50%,单不饱和脂肪酸含量为28.02%和24.72%,多不饱和脂肪酸含量为31.82%和33.37%。指出,长荡湖日本沼虾品质优良,且野生虾可作为优质亲本用于新品种选育研究。In order to compare the difference of muscle nutritional composition and content of Macrobrachium nipponense in Changdang Lake under different environmental conditions,the national standard biochemical assay analysis were conducted.The contents of water,protein,fat,ash content,amino acids and fatty acids in the muscles of 100 cultured and wild Macrobrachium nipponense from Changdang Lake were measured.The results showed that the content of muscle nutrients of cultured shrimp in Changdang Lake was higher than that of wild shrimp.The water content of cultured shrimp and wild shrimp was 76.62%,76.63%,the protein content was 18.38%,13.84%,the fat content was 0.67%,0.65%,the ash content was 1.25%,0.97%.A total of 17 kinds of amino acids were detected,of which the content of glutamic acid was the highest,and the total amount of amino acids was 21.72 g/100 g、21.29 g/100 g.The content of saturated fat was 23.96%,25.50%,monounsaturated fatty acid was 28.02%,24.72%,and polyunsaturated fatty acids was 31.82%,33.37%.The quality of Macrobrachium nipponense in Changdang Lake was excellent and the wild shrimp can be used as a high-quality parent for breeding new varieties.
