摘　　要：植物原花青素是由不同数量的表儿茶素或儿茶素结合而成的一种类黄酮化合物,具有抗氧化、抗炎症、抗癌、抗肥胖、降血糖等多种药理作用,也可以作为天然防腐剂,用来延长食品货架期、增强食品色泽等,在食品、医疗、化妆品等领域应用前景广阔。本文综述了原花青素在食品、医疗、化妆品领域的研究及应用,以期为原花青素的进一步开发利用提供参考。Plant proanthocyanidins are a flavonoid compound composed of different amounts of epicatechin or catechin.They have antioxidant,anti-inflammatory,anticancer,anti-obesity,hypoglycemic and other pharmacological effects.They can also be used as natural preservatives to extend the shelf life of food and enhance the color of food.Proanthocyanidins have broad application prospects in food,medical,cosmetics and other fields.In this paper,the research and application of proanthocyanidins in food,medicine and cosmetics were reviewed,which provided reference for further research and application of proanthocyanidins.
