摘 要:为明确红云红河保山基地不同成熟度对红花大金元烤烟品种烟叶中性致香物质和感官质量的影响,对比分析了3个田间采收成熟度处理烤后烟叶的中性致香物质含量和感官质量。结果表明,随着红花大金元烟叶田间采收成熟度的提升,大部分香气前体物降解产物及特征致香物质成分含量增加,各致香物质成分含量变化的幅度不一致。结合感官质量评价结果,烟叶大田采收成熟度标准为:下部叶,打顶后14 d左右,烟叶叶面黄绿色面积>50%~60%,主脉变白1/3以上;中部叶,打顶后34 d左右,烟叶叶面浅黄色面积>70%~80%,主脉变白2/3以上;上部叶,打顶后48~51 d,烟叶叶面浅黄色面积80%以上,主脉变白3/4以上。In order to clarify the effects of different maturity of flue-cured tobacco variety Honghua Dajinyuan on the neutral aromatic substances and sensory quality of tobacco leaves in Baoshan Base of Hongyun Honghe Tobacco Co.,Ltd.,the neutral aromatic substances contents and sensory quality of cured tobacco leaves in three field harvest maturity treatments were compared and analyzed.The results showed that,with the improvement of harvest maturity of Honghua Dajinyuan tobacco in the field,the contents of degradation products and characteristic aroma components of most aroma precursors increased,and the variation amplitude of each aroma component contents was inconsistent.Combined with the results of sensory quality evaluation,the maturity standard of tobacco leaves in the field was as follows:in the lower leaves,about 14 days after topping,the yellow-green area of tobacco leaf surface was>50%-60%,and the main veins turned white by more than 1/3;in the middle leaves,about 34 days after topping,the pale yellow area of tobacco leaf surface was>70%-80%,and the main veins turned white by more than 2/3;in the upper leaves,48-51 days after topping,the pale yellow area of tobacco leaf surface was more than 80%,and the main veins turned white by more than 3/4.
